They say that education is the paramount inheritance that we could pass on to our children – something that can never be taken away from them. I and my husband are believers. Aside from teaching them faith and respectable demeanors, we do everything we can to make sure our children get the best training at school. School is our partner in building a strong foundation for our kids’ success. Although, as I have observed, rearing our kids to become virtuous in this modern time is more challenging than before. And I have three boys! Raising them has never been and will never be like a walk in the park.

I remember when we were playing one day, I asked them what they wanted to be when they grow up. My youngest son, Elijah, said he wants to be a fireman. He was so game and in character! Ethan dreams of becoming a chef. I always ask him to join me in the kitchen and he enjoys it. Nikolas loves sports and physical pursuits. His goals include becoming a professional basketball player. As much as possible, I make myself free when he has an event. I hope and pray for their success in the near future. Yes, I am a supportive mom (maybe bordering to being a stage-mom). And a drama queen, I guess. Oh my, I get teary when think about the time when my little boys will no longer let me kiss or hug them in public. Ironically, I can’t wait to see them all fulfilled and happy in their own fields and passion.

To celebrate and promote wellness, I was one of the lucky bloggers who were invited for a Zumba session at the Marriott Hotel led by no other than the gorgeous Ms. Regine Tolentino. 

Jeunesse Anion organized this event in partnership with Simply Cereal, Doña Elena Olive Oils, Clara Ole, and Al Dente Pasta. It was indeed a day filled with fun, healthy food and fitness tips.

I love doing a little Zumba dancing here and there with my friends. I can burn excess fats without any hassle or any equipment needed. I must tell you though, when it's the Dance Diva Regine who is leading the pack, the energy level is absolutely and always up there. Everyone was pumped up as danced effortlessly and gracefully. We got the kind of sweat that we've all been looking for. Luckily enough, I get to insert some 15 to 30 minutes of light exercises and jogging the past few weeks despite my busy schedule. Somehow, I was prepared for this kind of workout. Zumba is a holistic approach of exercising to music that helps improve condition of the heart and lungs, better muscular strength and tone, and cuts the risk of osteoporosis and other bone diseases. 

As we all know, Ms. Regine Tolentino is a mom, a wife, and a great influence to other moms in terms of keeping the body fit and healthy through dancing. Moreover, did you know that she is a licensed Zumba
and U-Jam® Fitness instructor, and certified by the AFAA (Athletic and Fitness Association of America)? Yes, she is really amazing that way! That makes more sense, right? Now I’m even more motivated to keep a healthy lifestyle.
And a healthy lifestyle won’t be complete without guilt-free meals. Jeunesse Anion made sure we didn’t only get to take home some fitness tips. Because the brand understands moms have the most difficult job, juggling a lot of different tasks, Chef Mom Len Santos-Ding showed us some easy-to-prepare good food. She teaches at Heny Culinary School, contributes recipes to Yummy magazine and believes that a delicious meal can be healthy and, at the same time, not boring. She also holds regular cooking workshops in the Feed 5000 Kitchen Studio at Ayala Alabang Village. 

After seeing her do some magic out of the real and fresh ingredients, I’ll definitely check out the other recipes from her.

According to her, “Preparing healthy meals starts from grocery shopping. Choose food that is real and fresh but just as satisfying. It should give you energy throughout the day.” Here are the recipes she shared with us: 

Peanut Butter, Muesli and Fruit Parfait Serves: 1
Ingredients: 6 tbsps blueberries 2 tbsps peanut butter 4 tbsps plain yogurt 1 sliced banana 1/2 cup Simply Cereal Apple & Cranberry Muesli
Directions: 1. Whisk together the peanut butter and yogurt. 2. In an individual serving bowl or water goblet, layer half of the bananas. Top with 3 Tbsps of blueberries. Top with half the yogurt mixture and sprinkle with 3 tbsps of muesli. Repeat to make 2 layers. 3. Keep it chilled until serving time.



Golden Quinoa and Bokchoy Salad Serves 3-4
Ingredients: 1 1/2 tbsps Doña Elena Pure Olive Oil 1 tsp minced garlic 1/2-cup mushrooms, sliced 1 cup (170 g) uncooked quinoa 1/8 tsp cumin 1/8 tsp paprika 1/4 tsp turmeric 1/4 tsp salt 1 1/2 cups water or vegetable stock 1/2 cup red and green bell pepper, diced 1/2 cup purple cabbage, julienned 1/2 cup chopped flat parsley 2 bundles bokchoy, sliced thinly 1/2 tsp grated dried shiitake mushroom
Citrus Dressing: juice and zest of 1 small lemon juice and zest of 1 orange 2 Tbsp Dona Elena Extra Virgin Olive Oil Garnish: 1/4 cup mandarin oranges, drained
Directions: 1. Put quinoa in a fine mesh strainer. Rinse under running water until water runs clear. 2. Heat oil in a saucepot over medium heat. Sauté garlic. Add mushrooms and cook for about a minute. Add quinoa. Add more oil if needed. Quinoa grains must be coated with oil so it will be fluffy when cooked. Let it simmer then cook for about 15 minutes. 3. Once cooked, add the bell peppers, purple cabbage, flat parsley and bokchoy. Grate some dried shiitake on top for added umami. Cover so vegetables will soften in the steam as you make the dressing. 4. To make the dressing, whisk together lemon juice, orange juice and olive oil. Or you may put the ingredients in a small bottle and shake well. Season with salt and pepper. 5. Pour over the salad while still hot. Add mandarin oranges. It may be served hot, room temperature or cold.


One-Pot Cheesy Pesto and Vegetable Pasta Serves 2
Ingredients: 2 ½ to 3 cups broth or water 120 g Doña Elena Al Dente Spaghetti, uncooked 1 small onion, julienned 1 cup (60 g) broccoli florets ½ cup (30 g) asparagus, cut into 2 inch pieces 4 cloves of garlic, sliced 1 cup cherry tomatoes, cut in half pinch of red pepper flakes ½ tsp sea salt freshly ground black pepper 1 tbsps Doña Elena Pure or Extra Virgin Olive Oil ½ cup (80 g) green peas ½ cup Clara Ole Cheesy Pesto Sauce 3 Tbsps grated parmesan cheese 1 cup greens (kale, arugula, malunggay leaves) Optional: 100 g peeled shrimps
Directions: 1. In a large pot, add 2 ½ cups broth, spaghetti, onions, broccoli, asparagus, garlic, and cherry tomatoes. Season with red pepper flakes, salt and pepper. Drizzle with Dona Elena Olive Oil and set over high heat. 2. Once it starts to boil, set the timer to 7 minutes. Toss once in a while using tongs. 3. After 7 minutes, pasta should be almost cooked. If broth is drying out, add ½ cup more. Add peas and Clara Ole Cheesy Pesto. *You may add shrimps at this point if you wish. 4. Once it’s done, adjust seasoning if needed. Toss in greens such as malunggay leaves. Add grated parmesan cheese.



Try these recipes and you’ll surely be inspired to spend some time in the kitchen, and, most importantly, feel good. I mean, that’s the essence of it all, right? Be healthy, be confident, be happy, and everything will follow.

I used to have some really bad habits I thought I could never break. I guess all of us have been to such a point in our lives where we were so scared to let go. Let go of the past, let go of the people we love, let go of things that we thought we couldn’t live without. We’re too afraid to leave our comfort zone.

I used to drink a lot when I was still in my early 20’s. During those times, I made myself believe that it was just a way to cope up with stress and diffuse certain pressure around me. I cared less of my health, my body. I was just having fun not thinking about tomorrow. The hangovers didn’t make me stop. Nobody, nothing could convince me it was going to solve anything. I regret it, especially because it gave me a beer-belly which required a lot of effort to trim down. I abandoned that very bad habit of mine years ago, and dropped the negative things I held onto from the past. Changing your focus to optimism would really help.


This video will be relatable to many including myself. Vanessa’s story can be sum up to “Go hard or go home.” She said that herself when asked what drives her to becoming fit. Would you believe that she used to be a party girl? She was It dawned on her that she’s already abusing her body. Before it was too late, she made a turn and changed her lifestyle. Cooking for my family is a constant for me. Even if my schedule is so hectic, I always manage and find time to prepare healthy meals for them to show my affection. To make things more exciting for all of us, I often research on new recipes, or experiment if I feel like being more creative. This makes cooking more fun for me, and eating more delightful for my family. Indeed, nothing beats #LutongNanay.
I’m so elated to be part of the Knorr #LutongNanay campaign because this is really close to my heart. We can’t deny that instant food and take-out meals from food chains have conquered a lot of dining tables nowadays. 

Now on its 3rd year, the Knorr #LutongNanay campaign aims to promote delicious home-cooked meals for the Filipino families. I love Knorr and it has always been my companion in the kitchen for years. 
As expected, I didn’t have second thoughts when I got an invite for this year’s Knorr #LutongNanay celebration held last August 12, 2016 at The Cookery Place in BGC, Taguig. The venue was very nice and packed with guests who are obviously passionate for food, especially home-cooked meals. I was with other mommy bloggers who were equally excited as me.

It was hosted by Mommy Blogger, Louise Fandino-Santos, a certified Knorr mom. 
Our goal is to bring back the value behind home-cooked meals especially since people choose to eat outside or even alone in this fast-paced world. Knorr aims to help more moms bring the family together through the best flavors in their cooking. -Knorr’s Brand Manager for Bouillon and Seasonings, Dhiren Karnani.  

To make the celebration much tastier, Chef Kai, a talented chef and a mother to two, demonstrated different sinigang dishes. 
Honestly, I never thought they’re possible. I mean, I have seen some unconventional sinigang recipes online but I guess I was too afraid, or perhaps weird out, to try them out. I know how to cook the most common sinigang dishes - sinigang na hipon, sinigang na bangus and sinigang na baboy. 

So, you can just imagine how hesitant I was when we were told that we are to cook and plate Knorr Sinigang with Pakwan, Knorr Surf and Turf Sinigang, Knorr Sinigang na Liempo sa Sampaloc or Knorr Sizzling Sinigang after Chef Kai’s demo. 
I got enough encouragement to do the Knorr Surf and Turf Sinigang. Good thing it was a group activity. Whew!


Considering it was our first time to prepare such an unusual sinigang variant, we were all curious as to how our plates would turn out. 
After our food preparation, we got to taste all of the four sinigang dishes. Surprisingly, I think we did well considering it was our first time. Moms’ combined forces could produce excellent results indeed. #LutongNanay has never been this fascinating.

“Cooking is a force for good. When a mother cooks, it is often seen as a way for her to ensure her family’s well being…”, Karnani said.

Knorr Surf and Turf Sinigang Recipe
INGREDIENTS:
  • 1 L rice washing
  • 2 pcs onions, quartered
  • 2 pcs tomatoes, quartered
  • 2 pcs gabi, quartered
  • 1 pc green chili (sili pansigang)
  • 1⁄4 kg shrimp, trimmed
  • 1⁄4 kg Maya-maya, cut into serving pcs.
  • 1 pack Knorr Sinigang sa Sampalok Original 20g
  • 1⁄4 pc radish, sliced
  • 4 pcs okra
  • 1 cup long beans or sitaw, sliced
  • 1⁄4 kg pork sukiyaki, sautéed 
  • 1 cup kangkong, sliced

PROCEDURE: 
  1. Bring to boil rice washing in a pot with onions, tomatoes, gabi, and green chili until gabi is tender.
  2. Add shrimp, maya-maya, and Knorr Sinigang sa Sampalok Original. Simmer until cooked.
  3. Add radish, okra, and long beans. Simmer for a minute then add pork sukiyaki and kangkong. Cover for a minute then serve.
Knorr Sinigang na Liempo sa Sampaloc
INGREDIENTS:
  • 1 kilo liempo (pork belly), sliced in 2 inch cubes
  • 1 1/2 liter water
  • 2 (22 g) pack Knorr Sinigang na Gabi 
  • 1 bundle kangkong leaves 
  • 3 medium taro root (gabi), peeled and halved
  • 3 medium ripe tomato, halved
  • 2 medium yellow or white onion, quartered
  • 2 cups string beans (sitaw), cut in 2 inch length
  • 1 large Chinese eggplant (talong), sliced
  • 12 pieces okra
  • 3 to 4 pieces long green pepper (siling pansigang)
  • Fish sauce (patis) to taste

PROCEDURE:
  1. Boil the water in a cooking pot.
  2. Add the tomato and onion. Set the heat to medium and continue to boil for 15 minutes.
  3. Add the pork belly and gabi. Continue to boil in low heat for 1 hour or until the pork gets tender. Add more water, if necessary.
  4. Add the Knorr Sinigang na Gabi mix. Stir. 
  5. Add the long green chili and boil for 3 minutes.
  6. Stir-in the okra, string beans, and eggplant and cook for 5 minutes.
  7. Add the kangkong and fish sauce. Stir. Cover and turn off the heat. Let it stay covered for 5 minutes.
  8. Transfer to a serving bowl.
  9. Serve with warm rice.
  10. Share and enjoy!
Knorr Sizzling Sinigang Recipe
INGREDIENTS:
  • 500 grams Beef Short ribs
  • 10 shallots or baby red onions
  • 12-15 cherry tomatoes
  • 6 cloves of garlic, unpeeled
  • 2 tsp. oil
  • 2 Tbsp. butter
  • 5 cups water
  • 2 strings French beans
  • 2 Knorr Beef Cubes
  • 1 ½ Tbsp Knorr Sinigang Mix (add more if preferred)
  • 2 tsp. soy sauce
  • 1 ½ tsp. patis 
  • 2 tsp. Knorr Liquid Seasoning
  • 2 Tbsp. chopped garlic
  • Roux: 3 Tbsp. butter + 3 Tbsp flour
PROCEDURE:
  1. Sear the short ribs in oil and butter until brown. Transfer the beef in a pressure cooker and add water only to cover the meat. Cook for 45 minutes or until meat is tender.
  2. Remove meat and liquid from pressure cooker.
  3. In a pot, add 6 cups of liquid from pressure cooker and combine with Knorr Sinigang Mix and Beef Cubes. Bring the mixture to a boil then simmer. Season with patis and soy sauce. Adjust seasoning to taste.
  4. While sinigang broth is simmering, prepare the entire garnish. Deep fry shallots (unpeeled) and the garlic cloves (unpeeled) until crisp. Set aside.
  5. Fry tomatoes until skin cracks. Set aside
  6. Fry the chopped garlic until golden brown. Strain and set aside.
  7. Sauté the French beans for a few minutes. Set aside.
  8. Prepare the roux- in a skillet, add butter, when melted, add the flour. Cook for 1 minute.
  9. Use the roux to thicken the sinigang broth. Add the roux at a time to the broth while mixing with a whisk.
  10. Start plating. Add the beef, beans, tomatoes, garlic and shallots on your serving sizzling plate.
  11. Pour the sinigang broth on top of the plated dish top with garlic chips. Best served with cooked rice.
Knorr Sinigang with Pakwan Recipe
INGREDIENTS:
  • 500 grams Pork Belly  3 inches x 1 inch slices
  • 3 tbsp Knorr Liquid Seasoning 
  • 2 tbsp
    vegetable oil
  • 1 liter water
  • 3 cloves garlic, crushed
  • 1/2
     onion, cut into 2 wedges
  • 3 pcs tomatoes, sliced into quarters
  • 1 inch fresh ginger, cut into fine matchsticks
  • 1 lemongrass stalk, white part only
  • 2 pcs fresh kaffir leaves (optional)
  • 200 grams gabi, sliced into cubes
  • 500 grams seedless watermelon, peeled & cut into 1inch cubes  (divided into 2 parts)
  • 1 22-gram pack Knorr Sinigang sa Gabi mix
  • 1 cube from Knorr Beef Cubes 
  • 2 long green chillies, sliced
  • 150 grams sitaw, cut into 7 cm lengths
  • 1 tbsp
    fish sauce, plus extra to taste
  • ¼ tsp
    freshly ground black pepper
  • 100 grams okra
  • 1 bunch
    water kangkong 
  • 1 tbsp soy sauce
  • Steamed rice, to serve
  • fish sauce to serve

PROCEDURE: 
  1. Marinate the pork belly in Knorr Liquid Seasoning for at least 30 mins.
  2. Place a large casserole over medium-high heat. Add the oil and, working in batches, cook the pork until evenly browned. Remove with a slotted spoon and set aside.
  3. Reduce the heat to medium. Add the garlic and onions to the casserole. Add the tomatoes, ginger lemongrass, gabi and watermelon and cook for 2 minutes before returning the pork to the casserole. 
  4. Add the water, Knorr Sinigang Mix and Knorr Beef Cube. Cook for a further 1–1½ hours until the pork is almost tender.
  5. When the pork is tender. Remove the pork from the casserole and set aside. Strain the liquid and add the fish sauce, soy sauce and pepper to taste. 
  6. Add the remaining watermelon, beans, and okra and cook for 20 minutes, before adding the water spinach and cooking for a further minute until all the vegetables are tender.
  7. Serve with steamed white rice and fish sauce for dipping.
