Finding something to eat that is delicious and healthy at the same time can be really difficult especially when you have picky kids. I have always struggled with the fact that fast foods and junk foods are not healthy and can get you diseases. I always thought to myself, how can something so good be so bad?



So even though food is life, I ought to make sure that what I'm eating is not going to ruin my life. With this, I've leaned onto using US Potatoes. Potato is probably my favorite vegetable ever because it doesn't taste like you're eating grass. It's also so versatile that it can be used in a lot of recipes. For me personally, eating potatoes rather than white rice makes me feel full much faster.

Potatoes are more energy-packed than any other popular vegetable and have even more potassium than banana. Plus, there's a potato option to fuel the body and brain – it’s definitely the perfect snack to keep your kid bustling with energy throughout the day.



When I first heard about US potatoes, I am actually very surprised how potatoes are really healthy despite having french fries as its product counterpart. 
I've come to know that what makes french fries unhealthy is all the preservatives added to it.


Additionally, according to a study, potatoes tend to be well-liked by kids and can be a good source of potassium and dietary fiber for children aged one-three years. It showed potatoes provide 8% of the recommended daily value of fiber — important for growth, development and overall health of children.


Potatoes are a naturally fat-free and sodium-free vegetable. They have nearly half the daily value of vitamin C and are a good source of fiber, folate, manganese, niacin and phosphorus. Recent research shows potatoes do not displace other vegetables on the plate. In fact, when potatoes are served, a wider variety of vegetables are consumed. Potatoes are a true gateway vegetable, and is the only vegetable easily incorporated into kids’ breakfast. Offering potatoes during breakfast gives schools the opportunity to increase consumption of a nutrient dense vegetable.



One of our all-time favorite snack is potato balls. I always get it whenever we are in the mall. My kids love it. They even requested if I could make it at home and bring some to school. So being the loving mama that I am, I searched the internet for a recipe and cooked my way through their hearts. And to make it more interesting than our conventional potato balls, what I made are tuna croquettes. Of course, I use US potatoes as my main ingredient. With this, I was able to put a smile on their faces and even monitored their food intake even when they are at school. They even shared their baon with their classmates and asked me for more the next day! This simple things really make up for every hardships of being a mom.



The recipe I used in making my awesome Tuna Potato Croquettes is listed down below. I didn't break a sweat in making this because US potatoes are readily available and very easy to prepare. It's more tasty than the regular potato balls sold in the malls.

Tuna Potato Croquettes Recipe
INGREDIENTS
  • 850g US Potatoes 
  • 2 tablespoons warmed milk
  • 1 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon sweet paprika
  • 425g can tuna in brine, drained
  • 2 tablespoons flat-leaf parsley leaves, finely chopped
  • 2 eggs, lightly beaten
  • 3/4 cup dried breadcrumbs
  • extra-light olive oil, for shallow frying

Directions: 
  • Step 1
Place potatoes in a saucepan and cover with cold water. Bring to the boil over medium heat. Reduce heat to medium-low. Simmer 15 to 20 minutes or until tender. Drain. Return to saucepan. Add milk. Mash until smooth. Transfer to a bowl.
  • Step 2
Heat olive oil in a small, non-stick frying pan over medium heat. Add onion. Cook for 3 to 4 minutes or until soft. Add garlic and paprika. Cook for 1 minute. Add onion mixture, tuna and parsley to potato. Mix well.
  • Step 3
Place egg and breadcrumbs in separate shallow dishes. Using 1/4 cup mixture at a time, shape mixture into small sausage shapes. Dip croquettes, 1 at a time, in egg then roll in breadcrumbs to coat.
  • Step 4
One-third fill a frying pan with oil and heat over medium heat. Cook croquettes, in batches, turning, for 3 to 4 minutes or until golden.

Absolutely, yes! I may have already forgotten where I first heard this as a birthday greeting. All I know is that this line has been a constant reminder to me on how I should look at life and aging, and everything in between. I believe that having a great outlook in life is one of our main success factors. At times, it becomes the beginning of dreams and plans turning to our reality. I'm already on my 30's but I'm still a big fan of Disney princesses' movies. One of them is Rapunzel and I've been watching the Disney Channel's "Tangled: The Series". It is set between the stories told in Walt Disney Animation Studios' acclaimed 2010 film "Tangled" and its short film "Tangled Ever After". It airs every  Sunday at 11:30AM (Mal/Phil) on Disney Channel. 

With a new visually vibrant animation style inspired by Rapunzel’s drawings in the original film, the show follows Rapunzel on her adventures as she acquaints herself with her parents, her kingdom, and the people of Corona. Along the way, her irrepressible spirit and natural curiosity about the world lead her to realize that there is so much more she needs to learn before she can accept her royal destiny as Princess of Corona. 


At the heart of the series is Rapunzel’s relationship with her friends and family. Beloved characters from the feature film accompany Rapunzel (voiced by Mandy Moore) on her journey, including love interest Eugene Fitzherbert (Zachary Levi)(aka Flynn Rider); her loyal chameleon sidekick, Pascal; her no-nonsense, dutiful horse, Maximus; and the Snuggly Duckling Pub Thugs. The series will also introduce Cassandra (voiced by Eden Espinosa), a tough-as-nails-lady-in-wating who becomes Rapunzel's confidante; and builds on her relationship with her parents, King Frederic (Clancy Brown) and Queen Arianna (Julie Bowen). 

I love how Rapunzel's relatable, heartfelt and comedic stories model the importance of building and nurturing relationships, and of exploration and self-discovery. With her strength, confidence, positive disposition and creativity, she is a role model for young viewers who are learning to take on new responsibilities just as she is. 

The series features songs produced by Academy Award-winning Disney Legend Alan Menken, who also composed the songs from the feature film. 

To celebrate Rapunzel’s grand return across Southeast Asia, Disney Channel presents the multi-platform character hunt Tangled Quest. A provider, the light and pillar of every family, fathers are always expected to be strong for their loved ones, being the ones to ensure that every family member is doing okay. However, with all the things that he has to endure for his family, it’s high time that we make the effort to make him feel that all of his efforts are appreciated. 

“Kasama Mo” no matter what happens, dads will always be the silent supporter guiding his children to become the best individuals that they can be, and it is with this dream he is able to go through hardships without complaint. 

Firefly LED salutes all hardworking and madiskarte dads this Father’s Day with a wonderful video showing how even when dad’s not around, he always has his family on his mind. 

Interviewing three real-life fathers, Daddy Harold, Daddy Mario and Daddy Rowel talk about how much they love their families, and why they don’t mind making sacrifices especially if it means seeing their children grow up happy and well, and most importantly, that their families remain intact.

“Ako ang nag-aalaga sa kanila, lahat ng pangangailangan nila, pag-aaral, pagkain, baon nila araw-araw, kung ano yung kailangan, yun ang ginagampanan,” says Harold, a 43-year-old single father and architect of his responsibility to his three children. 

When asked what kind of father he is to his children, Rowel, a 47-year-old electrician has this to say, “Mapagmahal na ama. Hanggang kaya ko magtrabaho, gagawin ko. Sila lang ang kayamanan ko sa buhay.”

Fifty-year-old driver turned real estate agent, Mario, takes pride in being able to provide for his children, especially for their education, “Napagtapos ko silang lahat. Masasabi ko pa rin naman na naging maayos yung pagpapalaki ko sa kanila.”

When asked what it is that they continue to pray for their family, a teary-eyed Mario says that he doesn’t want a broken family, same with Rowel, who shares he doesn’t want his children to go through any hardships in life, adding how, one of his daughters is currently going through some problems with her partner who took away his grandchild. Sharing this, it is clear how heartbroken Rowel is over the situation. 

As the three fathers were talking about the joys and sacrifices of being a father, unbeknownst to them their families have been listening to their interviews, shedding tears of appreciation for their beloved fathers. 

However, another thing they also don’t know is that they will be surprising them for Father’s Day.

This time, it’s their families who will be making the effort to celebrate the wonderful fathers that they are. Selfless, loving, and will do anything for their families.  

“Siya yung tipo ng tatay na isusubo nalang yung pagkain, iuuwi pa sa ‘min, mahal na mahal ka namin.” says Rowel’s eldest daughter, who couldn’t help but cry as she recounts how selfless their father is when it comes to providing for their needs. 

Rowel’s daughter is equally filled with emotions when she greets her father, saying thank you for everything and apologizes for whatever heartaches she may have caused. Rowel receives her with a warm embrace. 

Harold is surprised to his children bring him a gift saying that it is the first time that he experienced something like this, and with a shaky voice, adds, “Masarap pala.”

It is definitely a tear jerking experience to hear their stories and see how, with a just a loving hug from their family members and words of appreciation, you’ll see the look of contentment and happiness in the three fathers’ eyes. 

That with just a small gesture of appreciation, they are reassured that all of their sacrifices for their families are worth it.

Just like our own fathers. 

“Darating din ang panahon na magiging magulang sila, sana ganon din ang gawin ng mga anak nila sa kanila,” ends Harold.

Being a mom is one of the hardest yet most rewarding jobs I've been blessed to have in my lifetime. There are some awesome highs — and some lows — that come with being someone's mama, but it's a job I wouldn't trade for anything. A mommy’s position in the family structure is undeniably important. I put up with tantrums, poopy diapers, vomit, carpools, early mornings, sleepless nights, stretch marks and stained clothes. One thing I've learned as a mom is that I'll never, ever be bored. With a toddler and teen running around, my life is a constant adventure. I miss having a baby though... and I pray that someday I will finally be given a baby girl.

It was very refreshing when I attended the 
Babyflo® Campaign Launch.
As soon as I entered the venue, there was this beautiful setup that I can't help but have my picture taken in it. It looks like a baby nursery and a baby shower venue.

There was also a backdrop of Iya, Drew and Baby Primo Arellano. They are known as #TeamA and #FirstFamily brand ambassadors of Babyflo®.

The BabyFlo Bath time song was stuck in my head the whole day. It had some good tunes and it was really catchy. Great job to whoever thought about that. You can really see the message of baby bonding of mother and child through Iya and Baby Primo having a bath time. 

During the event, we also learned about Baby Bonding Philippines, an early intervention attachment-based programme designed to help pregnant women, mothers, father, and carers with their babies and toddlers to get off the best possible start in life, cofounded by Dr. Joy Malinit and Dr. Lyn Malinit as a part of their advocacy work.
I also won the Facebook post raffle and received this gift pack from BabyFlo and a chance to meet and greet the Arellano Family. Baby Primo is so cute! You can really feel the love flowing with this family.
